I pulled my driveshaft a while back to change the U-joint. I left the shaft out for about a month. I never saw any fluid come out of the hole the driveshaft came from, but I would assume there should be fluid in there. Since the job, the truck makes a terrible wining/grinding sound with engine speed, and goes away when my foot is off the gas. I'm wondering if there should be some fluid in there that I should have replaced. 1993 Ford F-150.

Whether your transmission is auto or manual you only have one fluid level to maintain. Check it and refill as needed.
If you left your driveshaft out for a month, some moisture or debris could have gotten in there but, it's more likely that the seal that the shaft goes through is dry. That can make some noise.

I take it you truck is an automatic.. the only fluid in it where the drive shaft comes out of is the fluid in the automatic transmission. It should not leak out while the motor is off.
does the truck have the hanger barren in the middle of the drive shaft? If so it might need replacing.

yes, fluid will come out of the transmission if the drive shaft is taken out, that is normal.
1) Check your transmission fluid level, you probably need to add fluid to it. (check with the truck running in park)
2) Check the gear oil in the rear axel it could be low also.
